Ingredients

Crust:
Filling:
- 1 can coconut milk, canned
- 1 tbsp gelatin
- 1 scoop Quest Chocolate Milkshake Protein Powder
- 1 cup sugar free chocolate chips
- 1 tsp vanilla extract
- Pinch sea salt
- 2 tbsp chopped macadamia nuts, for topping
- 2 tbsp toasted coconut, for topping
Method
- Preheat the oven to 350 F and prepare a 9-inch pie dish with non-stick spray. Break the cookies into small pieces and place them on a baking sheet lined with parchment paper. Bake for 4-6 minutes and golden brown. Let cool.
- Place the cooled cookies into a high speed blender and blend until the fine crumbles form.
- Transfer to a mixing bowl and add in the melted butter and use a fork to combine. Press the mixture into the bottom and up the sides of the pie dish. Bake the pie crust for 5-7 minutes and golden. Let cool.
- Meanwhile, in a small pot, whisk together the coconut cream and gelatin. Turn on medium-high heat and bring to a boil. Once boiling, remove from heat and whisk in the protein powder.
- Place the chocolate chips into a heat proof bowl and pour the boiling mixture over the chocolate.
- Let sit for 5 minutes before stirring smooth. Mix in the vanilla and salt. Pour the chocolate into the crust and chill for 2 hours.
- Top with crushed macadamia nuts and toasted coconut. Slice into 12 even pieces and serve.
