- Preheat the oven to 350 F and spray a 9-10 inch cast iron skillet with non-stick spray.
- In a bowl, stir together the almond flour, protein power, baking soda, salt, chocolate chips and peanut butter cups.
- In a standalone mixer or using a hand mixer, beat the melted sugar and butter for 2 minutes.
- Add in the eggs and vanilla extract until combined.
- Mix in the dry ingredients and stir just until the dough comes together.
- Press the dough into the skillet and bake for 18-20 minutes and a toothpick when inserted comes out clean.
- After 20 minutes, if your cookie isn’t cooked through, cover with tin foil and continue to cook for an additional 5-6 minutes.
- Cut into 12 slices and serve hot with ice cream if desired.
