We started doing our own version of the truffle shuffle when we saw this Questified sweet treat. We tried these frosted cookie truffles and found ourselves delighted by the taste of Quest Frosted Cookies and filled with the kind of pleasure that comes with a dessert that won’t crush your low carb dreams.

Ingredients

CHOCOLATE FRUSTED COOKIE TRUFFLES

  • 2 Quest Chocolate Frosted Cookies
  • 2 tbsp unsweetened cocoa powder (Hershey’s)
  • ½ scoop Quest Chocolate Milkshake Protein Powder
  • 3 oz Greek yogurt cream cheese
  • ⅓ cup almond flour (Bobs red mill)
  • ½ cup sugar free chocolate chips (Hershey’s)
  • 1 tsp coconut oil
  • 1 tbsp sprinkles

Method

  1. Chop the cookies into small pieces and place them into a food processor along with the cocoa powder, protein powder, cream cheese and almond flour.
  2. Process until a dough comes together, you may need to stop and scrape the sides.
  3. Roll the dough into 10 evenly sized balls and place them on a baking sheet lined with parchment paper.
  4. Chill for 1 hour.
  5. Melt the chocolate and oil together in a microwave safe bowl until smooth.
  6. Dip each chill truffle into the chocolate and let the excess chocolate run off before placing it back on the baking sheet.
  7. Top with sprinkles and return to the refrigerator until chocolate is solid.
  8. Serve.
  9. Store truffles in the refrigerator or a cool place.
