- 1 medium head cauliflower
- 3⁄4 cup canned corn, drained
- 1 cup grated cheddar cheese
- 1⁄2 cup almond flour
- 2 eggs
- 1 bag Quest Sour Cream Onion Protein Chips
- Crushed Salt and pepper to taste
- 1⁄2 avocado
- 1⁄4 cup cilantro
- 2 tbsp sour cream
- 1⁄4 cup water
- 1 tbsp lime juice
- Salt and pepper to taste
- 2 tbsp olive oil for frying
Method
- Chop the cauliflower into florists and then add them to a food processor until chopped finely like rice sized pieces and then transfer to a microwave safe and cover with plastic wrap.

- Transfer to a tea towel and drain the excess liquid.
- In a bowl, stir together the drained cauliflower, corn, cheese, almond flour, eggs, crushed chips, salt and pepper.
- Separate the mixture into 10 patties. Heat a large skillet with medium-high heat.
- Once hot, add 2 tablespoons of oil and 2-3 cauliflower patties.

- Repeat until you have cooked all the patties.
- Place the avocado, cilantro, sour cream, water, lime juice and salt and pepper into a blended and blend until smooth.
- Top each patty with a dollop of avocado cream and serve.
