Ingredients
SPICY ELOTE
- 4 medium corn on the cob, shucked
- ¼ cup sour cream
- ¼ cup mayonnaise
- 1 clove garlic, minced
- Zest from 1 lime
- ½ tsp chili powder
- ½ tsp paprika
- ¼ cup cilantro, chopped
- 1 bag Quest Hot and Spicy Chips, crushed
- ½ cup cotija cheese
- Lime wedges
Method
- Grill corn until tender.
- In a bowl, stir together the sour cream, mayonnaise, garlic, zest, chili powder, paprika and half of the cilantro.
- Slather mixture over corn and top with crushed hot and spicy chips, cotija cheese and remaining cilantro. Serve with lime wedges.
