Ingredients

Method

  1. Preheat the oven to 425 F and prepare a large baking sheet with the oil and place it into the oven.
  2. Wash the potatoes well and use a box grater to shred the potatoes and onion.
  3. Transfer the shredded potatoes and onion to a clean dish towel and wring out all the water.
  4. Let it sit for 5 minutes and then wring it out again until all the liquid is gone.
  5. Add the drained potatoes and onion to a mixing bowl along with the egg, crushed chips and saltand pepper. Use your hands to combine.
  6. Remove the baking sheet from the oven and use an ice cream scoop to make 12 mounds.
  7. Press the mounds flat using a spatula.
  8. Bake for 13-15 minutes, flip and bake for an additional 5 minutes.
  9. Serve with sour cream and chopped green onion if desired.
