Ingredients

DIPPED COOKIE CAKE IN A JAR

Cake:

  • ½ cup almond milk
  • 3 eggs room temperature
  • ⅓ cup vegetable oil
  • ¼ cup zero calorie sweetener
  • ¼ cup almond flour
  • ¼ cup 1:1 gluten free flour
  • ¼ cup unsweetened cocoa powder
  • 1 scoop Quest Chocolate Milkshake Protein Powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch salt

Frosting:

Method

  1. Preheat the oven to 350 F and prepare a 8×8 inch pan with non-stick spray.
  2. In a bowl, whisk together the milk, eggs, oil and sweetener.
  3. In another bowl, sift together the almond flour, gluten free flour, unsweetened cocoa powder, protein powder, baking powder, baking soda and salt.
  4. Add the dry ingredients to the wet and whisk until no dry spots remain.
  5. Transfer to the baking pan and bake for 30-35 minutes and a toothpick comes out clean. Let cool completely.
  6. Whisk together the frosting ingredients until smooth and well blended. Transfer to a piping bag.
  7. Use your hands to crumble the cake into small pieces.
  8. Fill 6 (16oz) jars ⅓ of the way with cake crumbles and press them down.
  9. Top with a layer of piped frosting and a handful of Dipped Cookie Dough pieces.
  10. Repeat until you fill up the jars. *Store in the refrigerator until ready to eat
