QUESTIFIED PUDDING CUPS (EARTH DAY EDITION)
Method
- In a bowl of a stand mixer, beat together the milk and protein powder.
- Add in the pudding mix and beat on low-medium speed for 5 minutes and the pudding has thickened. Cover and chill.
- Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
- Unwrap the Quest Bars and place them beside each other on a piece of parchment paper.
- Microwave for 10 seconds and then cover with another piece of parchment paper and use a rolling pin to roll out into a thin disc.
- Use a cactus cookie cutter to cut out 5 cookies. Place them on the baking sheet along with any leftover scraps and bake for 6-7 minutes. Let cool.
- Melt the white chocolate and coconut oil together until smooth. Stir in the green food coloring.
- Dip each cactus in the white chocolate. Chill until chocolate is solid.
- Divide the pudding between 5 small bowls. Crumble the cookie scraps over each pudding bowl and top with a cookie cactus. Serve.
