Ingredients

BIRTHDAY CAKE MINI CHEESECAKES

Crust:

  • ½ cup almond flour (Bobs red mill)
  • 1 tbsp zero calorie sweetener
  • 2 tbsp butter, melted

Cheesecake:

Method

  1. Place the almond flour and sweetener into bowl
  2. Add in the melted butter and stir until a dough forms
  3. Press the dough into the bottom of 6 cupcake liners and bake at 350 F for 10 minutes
  4. Chop the Quest Cookie into small pieces
  5. Blend together the cheesecake ingredients and then stir in the frosted cookie pieces and sprinkles
  6. Top crusts with cheesecake filling
  7. Bake for 15-20 minutes and baked through let cool and top with cool whip if desired
