Ingredients

PINEAPPLE BBQ MEATBALLS

Meatballs:

  • 1lbs ground turkey
  • 1 egg
  • 2 bags Quest BBQ Original Chips, crushed
  • ¼ cup almond flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt and pepper

Sauce:

  • 1 cup diced pineapple (canned)
  • 2 tbsp sugar free syrup (wholesome Yum Honey)
  • ¼ cup coconut aminos
  • 3 tbsp tomato paste
  • ½ cup pineapple juice

Method

  1. Preheat the oven to 475º F and prepare a baking sheet with parchment paper.
  2. Combine all the ingredients for the meatballs in a mixing bowl using your hands.
  3. Form into 15 evenly sized meatballs. Bake the meatballs for 10-12 minutes and cooked through.
  4. Meanwhile, add the diced pineapple to a skillet over medium heat and cook for 1-2 minutes.
  5. Add the remaining sauce ingredients, stir and let simmer for 5-7 minutes and the sauce has thickened.
  6. Add the cooked meatballs and serve.
