Method

  1. Preheat the oven to 350 F and prepare a mini cupcake pan with non-stick spray.
  2. In a bowl, stir together the peanut butter, egg and sweetener until a dough forms.
  3. Separate the dough into 9 evenly sized balls.
  4. Press the balls into the bottom of each mini cupcake cavity and bake for 12-15 minutes and golden brown.
  5. Remove from the oven and immediately press an unwrapped mini peanut butter cup into the center of each cookie.
  6. Let cool completely, about 1 hour before removing and serving.
