Ingredients

COOKIES & CREAM TART

Crust:

  • 2 cups almond flour
  • 1 tbsp unsweetened cocoa powder
  • 3 tbsp butter, melted

Method

  1. Preheat the oven to 350 F and prepare an 11” tart pan with non-stick spray.
  2. In a food processor, pulse the flour and cocoa powder together until combined.
  3. Add in the melted butter and pulse until the mixture resembles sand.
  4. Press the mixture into the bottom and up the sides of the tart pan. Bake for 7-8 minutes. Let cool.
  5. Cut the protein bar into small pieces and place them into a microwave safe bowl along with 3 tablespoons of heavy cream. Microwave for 15 seconds, stir smooth.
  6. Add the remaining heavy cream into a small pot over medium heat and bring to a boil.
  7. Pour the hot heavy cream over the chocolate chips in a heatproof bowl.
  8. Let sit for 4 minutes, add in the melted Quest bar and stir smooth.
  9. Pour the mixture into the prepared crust and let cool for 30 minutes before chilling for 2 hours.
  10. Whip up the heavy cream for the topping and then add in the protein powder.
  11. Spread the mixture in an even layer over the top of the tart and top with crushed cookie pieces.
  12. Cut into 18 slices and serve.
