Ingredients

S’MORES ICE CREAM SANDWICH

Cookies

  • 1 S’mores Quest Bar
  • 2 cups almond flour
  • ⅓ cup powdered zero calorie sweetener
  • ½ tsp xanthan gum
  • Pinch sea salt
  • 6 tbsp butter, cold
  • 1 tsp vanilla extract

Fudge:

Ice Cream:

  • 2 ¾ cup low calorie vanilla ice cream

Method

  1. Preheat the oven and prepare a baking sheet with parchment paper. Cut the bar into small pieces and bake them for 5 minutes. Once cooled, place them into a food processor and blend until fine crumbles form. Add in the almond flour, sweetener, gum and salt and pulse to combine. Next, chop the cold butter and add it to the food processor along with the vanilla and blend until a dough comes together.
  2. Roll the dough out between two pieces of parchment paper until it’s ⅛ “ in thickness. Use a 2 ½ “ cookie cutter to make 22 cut out cookies. Place the cookies on the baking sheet and bake for 8-10 minutes and golden. Let the cookies cool completely.
  3. Add the heavy cream, sifted cocoa powder and protein to a pot and whisk to combine. Add in the chocolate and butter. Turn on low heat and stir until smooth and melted. Stir in vanilla.
  4. Add a spoonful of chocolate in the center of half of the cookies, top with a scoop of ice cream (about ¼ cup) and finish with remaining cookies to make a sandwich. Freeze until ready to eat.
