Rejoice, for your pancakes now have lemony flavor and protein.

Ingredients

LEMON POPPY SEED PANCAKES

Method

  1. In a large mixing bowl, combine the almond flour, baking powder, salt, protein powder and poppy seeds.
  2. In a microwave safe bowl, add the chopped Quest bar and almond milk.
  3. Microwave on high for 30 seconds and stir smooth (there will be a few bits that don’t melt) and then allow to cool for1-2 minutes.
  4. Whisk in the eggs, butter and zest. Add the wet ingredients to the dry and stir just until combined.
  5. Let the batter rest for 10 minutes.
  6. Heat a pancake griddle to 325 F or a skillet over low-medium heat.
  7. Spray with non-stick spray and cook the pancakes about 1/3 cup at time until golden brown, about 2-3 minutes on eachside.
  8. Serve warm with your favorite syrup.
