Ingredients

QUESTIFIED PUMPKIN SOUP & CRACKERS

  • 1 tbsp olive oil
  • 2 shallots, roughly diced
  • 2 cloves garlic, chopped
  • 15 ounces pumpkin puree or 1 sugar pumpkin (roasted, peeled, seeds removed and pureed)
  • 2 cups chicken broth
  • 1 cup water
  • 1 tsp thyme
  • ¼ tsp cumin
  • ⅛ tsp ginger
  • 1 bay leaf
  • Salt and pepper to taste
  • ¼ cup coconut cream
  • 2 packages Quest Cheese Crackers

Method

  1. Add the olive oil to a large pot (preferably a dutch oven) and saute the shallots until tender.
  2. Add in the garlic and cook until browned.
  3. Add in the thyme and cook for 30 seconds before whisking in the pumpkin puree, chicken broth, cumin, ginger and salt and pepper.
  4. Use an immersion blender to blend until smooth.
  5. Add in the bay leaf and bring the mixture to a boil. Reduce heat to a simmer and cook for 15 minutes.
  6. If you prefer your soup to be thinner, add ½-1 cup water. Stir in cream before serving with Quest Cheese Crackers.
