- Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
- In a bowl, stir together the almond flour, protein, sweetener, spice, baking soda and salt.
- In another bowl, whisk together the pumpkin, cashew butter and egg.
- Add the wet ingredients to the dry and stir until a batter comes together.
- Stir in half of the peanut butter cups and then transfer the batter to the prepared baking pan.
- Top with remaining peanut butter cup pieces and chocolate chips.
- Bake the blondies for 20-22 minutes and golden.
- Let them cool completely before cutting into 16 squares and serving.
