Both live in delicious harmony in this scrumptious and quite festive Halloween snack. Add ‘em to your party table then watch them disappear.

Ingredients

QUESTIFIED PUMPKIN SPICE HALLOWEEN COOKIES

  • 1⁄2 cup pumpkin puree
  • 1 cup natural peanut butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1⁄2 cup almond flour
  • 1 scoop Quest Caramel Protein Powder
  • 1⁄2 cup zero calorie sweetener
  • 1⁄4 tsp baking soda
  • 1⁄4 tsp baking powder
  • 1⁄4 tsp cinnamon
  • 1⁄4 tsp pumpkin spice
  • Pinch salt
  • 16 mini Quest Peanut Butter Cups
  • 1⁄3 cup sugar free chocolate chips
  • 32 Mini eye candies

Method

  1. In a bowl, whisk together the pumpkin, peanut butter, egg and vanilla extract.
  2. In another bowl, whisk together the almond flour, protein, sweetener, baking soda, baking powder, cinnamon, pumpkin spice and salt.
  3. Add the dry ingredients to the wet and stir using a rubber spatula until a dough comes together and no dry spots remain.
  4. Chill dough in the refrigerator for 15 minutes.
  5. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  6. Separate the dough into 16 evenly sized balls and place them on the baking sheet.
  7. Use the bottom of a glass to press them flat.
  8. Bake the cookies for 10-12 minutes and then let them cool completely.
  9. Melt the chocolate and coconut oil together until smooth and then place it into a plastic zip bag and cut the corner to make a piping bag.
  10. Pipe chocolate legs onto each cookie and top with a Quest Mini Peanut Butter Cup.
  11. At the front of each spider pipe a bead of chocolate to make the head and add the candy eyes.
  12. Place the cookies into the refrigerator until the chocolate has set. Serve.
