Ingredients

QUESTIFIED BAKED CAULIFLOWER MAC AND CHEESE BALLS

  • 12oz bag frozen cauliflower rice
  • 2 tbsp heavy cream
  • 2oz cream cheese
  • 3⁄4 cup cheddar cheese, grated
  • 1⁄3 cup jack cheese, grated
  • 1⁄2 tsp ground mustard
  • Salt and pepper to taste
  • 2 eggs, whisked
  • 1⁄3 cup coconut flour
  • 2 Quest Nacho Cheese Tortilla Chips, crushed

Method

  1. In a pot over medium heat, add the cauliflower rice, cook until tender, about 5 minutes.
  2. Add in the heavy cream, cheeses, ground mustard and salt and pepper.
  3. Stir occasionally until everything is melted.
    Line a baking tray with parchment paper.
  4. Use a 1 1⁄2 inch cookie scoop to make 12 evenly sized balls and place them on the tray.
  5. Freeze for 20 minutes.
  6. Preheat the oven to 375 F.
  7. Place the whisked eggs into a bowl, the coconut flour into another and the crushed Tortilla Chips into a third bowl.
  8. Remove the cauliflower cheese balls from the freezer and coat each one in coconut flour.
  9. Once they are all coated, dip each one into the eggs until completely covered and then finally the tortilla chips until well coated.
  10. Return them to the baking sheet.
  11. Bake the cauliflower mac ‘n cheese balls for 12-14 minutes and golden brown.
  12. Serve immediately.
