Ingredients

FROSTED BIRTHDAY CAKE PANCAKES

  • 1 ⅓ cup almond flour (Bobs red mill)
  • 2 tbsp coconut flour (Bob’s Red Mill)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp zero calorie sweetener
  • 1 scoop Quest Vanilla Milkshake Protein Powder
  • 2 large eggs
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 Quest Frosted Cookie, chopped and separated
  • 1 tbsp sprinkles

Method

  1. In a mixing bowl, stir together the almond flour, coconut flour, baking powder, salt sweetener and protein powder.
  2. In another bowl, whisk together the eggs, milk and vanilla extract.
  3. Add the wet ingredients to the dry and stir until no dry spots remain.
  4. Fold in the cookie pieces, reserving 2 tablespoons.
  5. Prepare a griddle or frying pan with non-stick spray and turn on medium-low heat.
  6. Cook pancakes ¼ cup at a time for 2-3 minutes on each side and golden brown.
  7. Serve with remaining cookie crumbles.
